Boning Knives

What is the difference between a Straight and a Curved boning knife?

Straight boning knives have a blade that runs in a straight line from heel to tip. They provide maximum control for precise cuts along flat or large bone structures and are commonly used in beef and pork processing.

Curved boning knives have a blade that curves upward toward the tip. The curve allows the blade to follow the contour of bones and joints more naturally, reducing effort and improving yield. They are widely used in poultry processing and for working around rounded bones.

If you are unsure which profile fits your operation, share details about the protein type and cutting task -- we can recommend the appropriate option.

What flexibility options are available for boning knives?

Boning knives are available in three flex levels:

  • Stiff -- Minimal blade flex. Best for dense muscle tissue, heavy boning tasks, and situations requiring maximum control and force.
  • Semi-Stiff -- Moderate flex. A versatile option that balances control with the ability to follow bone contours. Suitable for a wide range of boning applications.
  • Flexible -- High blade flex. Ideal for filleting, trimming, and tasks where the blade must closely follow curved surfaces or thin cuts around bones.

Flexibility is controlled by blade thickness and geometry. Please specify your required flex level when requesting a quote.

Can I order boning knives in both Straight and Curved profiles in the same order?

Yes. You can combine different profiles, sizes, and flex levels within the same order. Each SKU (profile + size + flex + handle color) is treated as a separate line item. Quantities and MOQ are evaluated per SKU. Please provide a clear breakdown of each specification when submitting your inquiry.

03

Sharpening Steels

What types of sharpening steels do you offer?

We offer seven categories of sharpening steels:

Type Typical Use
Regular CutGeneral honing; restores edge on moderately dull blades
Fine CutFiner honing for sharper, smoother edge refinement
Ultra-Fine CutPolishing-level honing for precision cutting tasks
PolishedSmooth surface for finishing and edge alignment
Mirror PolishedHighest surface finish; edge alignment and light stropping
DiamondAggressive material removal; re-edges very dull or hard-steel blades
CeramicFine honing with ceramic abrasive; popular for high-hardness blades
What rod shapes are available for sharpening steels?

Standard rod shapes are:

  • Round -- The most common shape. Suitable for all standard honing tasks and compatible with all blade profiles.
  • Oval -- Provides a slightly different contact angle, preferred by some professional butchers for faster edge alignment.
  • Square -- Flat faces allow honing on serrated or flat-grind blades. Also used for specific commercial applications.

Custom rod shapes are available for OEM orders. Please provide drawings or reference samples if you require a non-standard profile.

What standard lengths are available for sharpening steels?

Standard lengths are 6", 8", 10", 12", and 14". Custom sizes are available. Approximately five handle styles are offered, and handle colors include Black, Blue, Red, White, Yellow, Green, and custom colors. Please specify length, shape, cut type, handle style, and handle color when requesting a quote.

04

Magnetic Knife Bar

What is the difference between 201 and 304 stainless steel for magnetic knife bars?

201 Stainless Steel is a lower-cost austenitic grade with slightly higher manganese and lower nickel content compared to 304. It offers adequate corrosion resistance for most dry or low-humidity indoor environments and is a cost-effective choice for standard commercial applications.

304 Stainless Steel is the industry standard for food-contact and commercial kitchen environments. It provides superior corrosion resistance, particularly in wet, high-humidity, or frequently sanitized environments. It is the recommended grade for professional kitchens, food processing facilities, and any application requiring long-term durability and hygiene compliance.

If your application involves regular cleaning with sanitizing chemicals or exposure to moisture, 304 is the appropriate choice.

What sizes are available for the magnetic knife bar?

Standard sizes are 12" and 18". Custom sizes are available upon request. All bars are wall-mounted. Please specify the required length, stainless steel grade (201 or 304), and quantity when requesting a quote.

How does the Commercial Knife Rack differ from the Magnetic Knife Bar?

The Commercial Knife Rack is a 12" wall-mounted stainless steel rack with plastic knife inserts. It is non-magnetic -- knives are held by the inserts, not by magnetic force. This design is commonly used in HACCP-controlled commercial kitchens and food processing environments where knife separation and hygiene traceability are required.

The Magnetic Knife Bar uses embedded magnets to hold knives against the bar surface. It is available in 12" and 18" lengths in 201 or 304 stainless steel, and is suitable for both professional kitchens and commercial environments where quick knife access is a priority.

05

Custom & OEM

What customization levels do you support?

We support three levels of customization:

  • Standard Products -- Existing SKUs in established specifications. Fastest lead time, lowest MOQ, no tooling cost.
  • Light Customization -- Adjustments to steel grade, handle color, logo, or packaging on existing product structures. No change to core blade geometry. Moderate MOQ, may involve minor setup costs.
  • Deep OEM Development -- Custom blade shape, thickness, width, special dimensions, new handle design or material, or development from drawings, physical samples, or reference images with key parameters. Requires technical evaluation, tooling, and a formal sampling process before mass production.
What is the deep OEM development process?

The deep OEM process follows these stages:

  1. 01Provide drawings, physical samples, or reference images with key parameters (dimensions, material, hardness, edge profile, handle requirements).
  2. 02Our technical and production team evaluates feasibility.
  3. 03Final specifications are confirmed and frozen in writing.
  4. 04Quotation issued including tooling/fixture costs, MOQ, sample fees, and lead time.
  5. 05Samples are produced and internally inspected.
  6. 06Samples are shipped to the client for actual-use testing and approval.
  7. 07Upon client approval, mass production proceeds. The approved sample becomes the quality benchmark for all subsequent production.

Important: Technical solutions and costs for deep OEM cannot be confirmed by the sales team alone. All specifications must be reviewed and approved by our technical and production departments before commitment.

Who is responsible for re-sampling costs if the sample does not match specifications?

If the sample does not meet the previously confirmed and frozen specifications due to our production error, we bear the cost of re-sampling. If the client changes or adds requirements after specifications have been confirmed, the cost of additional sampling is reassessed and typically borne by the client. This is why we emphasize thorough specification confirmation before production begins.

Can I make changes to an OEM order after mass production has started?

Once an order enters mass production it is considered frozen. Any modification request must be formally re-evaluated for feasibility, cost impact, lead time adjustment, and scrap risk before a decision can be made. We strongly recommend resolving all specification questions during the sampling and confirmation stage to avoid disruption and additional costs.

07

MOQ

Do you have a fixed company-wide MOQ?

No. We do not have a single fixed MOQ that applies to all products. MOQ is determined case by case based on the following factors:

  • Product type and specific SKU
  • Degree of customization (standard vs. light custom vs. deep OEM)
  • Tooling or setup requirements
  • Packaging type (bulk vs. custom printed)
  • Current production scheduling and capacity

Please share your product requirements and estimated quantities so we can provide an accurate MOQ alongside your quotation.

Can I order multiple SKUs in the same shipment to meet MOQ?

MOQ is generally assessed per SKU (per product type, size, specification, and handle color combination), not as a combined total across different SKUs. However, we understand that distributors and multi-SKU buyers often have this need. Please share your full SKU list and estimated quantities per item -- we will evaluate flexibility based on the overall order scope.

08

Samples

Do I need to test samples before placing a bulk order?

For new clients and new product configurations across all three product lines, we strongly recommend testing samples before committing to a bulk order. The approved sample serves as the quality benchmark for mass production. This is the most reliable way to confirm that performance, dimensions, handle feel, and finish meet your requirements before full-scale production begins.

Are sample fees charged? Are they refundable?

Sample fees depend on the product type and level of customization. Standard or near-standard samples may have a nominal fee or be provided at cost. Deep OEM samples involving tooling or special production runs will incur sample and tooling fees that are confirmed in advance. Sample fees and their refundability (typically refundable against the first qualifying mass production order) are confirmed on a case-by-case basis. Shipping costs are generally borne by the client.

Do repeat orders require new samples?

For repeat orders with identical specifications to a previously approved order, new samples are not required. We reference the original confirmed sample and order record, verify the configuration and quantity, and update pricing and lead time accordingly. If any specification has changed -- even minor adjustments -- a new sample evaluation may be needed.

09

Quoting

What information do you need to provide a quotation for knives?

At minimum, we require the following to issue a quotation for kitchen knives:

  • Knife type (e.g., Butcher, Boning, Cimeter)
  • Blade length (e.g., 6", 8", 10")
  • Estimated quantity

For Boning Knives, please also specify Straight or Curved and the required flex level (Stiff / Semi-Stiff / Flexible). Additional details such as handle color, logo requirements, packaging type, target market, and quality/price positioning help us recommend the most suitable steel grade and configuration.

What information is needed to quote sharpening steels?

To quote sharpening steels, please provide:

  • Type (Regular Cut, Fine Cut, Diamond, Ceramic, etc.)
  • Length (6", 8", 10", 12", 14", or custom)
  • Rod shape (Round, Oval, Square, or custom)
  • Estimated quantity

Handle style and color preferences, logo requirements, and packaging type are also helpful.

What information is needed to quote knife racks and magnetic knife bars?

For the Commercial Knife Rack, please provide the required quantity. For the Magnetic Knife Bar, please provide the size (12", 18", or custom length), the preferred steel grade (201 or 304), and the required quantity.

How do you select the appropriate steel grade for a knife order?

After confirming knife type, length, and quantity, we typically present one to three suitable options for the client to evaluate. Our recommendation is based on the destination market, intended use environment, target quality and price positioning, and any specific performance requirements (edge retention, hardness, corrosion resistance). We will explain the trade-offs between options so you can make an informed decision before we proceed to a formal quotation.
